Broccoli
50 g green soybeans (edamame)
Soy sauce, 1 tablespoon
Instructions:
First, cut the tofu into square pieces.
Then turn on the grill and let it heat up for a while.
Arrange the tofu on a tray, brush it with oil, sprinkle some sesame seeds over it, and place it under the grill until crispy.
Next, add the ginger, garlic, and red chili to 1 teaspoon of sesame oil and pour it over the tofu.
Then mix everything well.
Add half of the scallions and stir for another minute.
Add the rice and stir-fry for 5 minutes until heated through.
Then add the broccoli and soybeans and toss with the soy sauce.
Now spoon the rice into bowls and top with the tofu.
Finally, garnish with the remaining scallions.
Miso Soup with Crispy Smoked Tofu
Ingredients:
Vegetable stock, 1 liter
Mushrooms, 10 g
White miso paste, 2 tablespoons
Ginger, a thumb-sized piece, chopped
Garlic, 1 clove, crushed
Smoked tofu, 100 g, drained and cubed
Sesame oil, 2 teaspoons
Cabbage, 100 g
Sesame seeds, 2 teaspoons
A splash of verjuice
Instructions:
Gently heat the vegetable stock, ginger, and garlic in a pan.
Then cook for 5 minutes.
Next, heat a frying pan over medium heat.
Add the tofu and sesame oil to the pan and sauté for 4–5 minutes until crispy.
In the next step, add the cabbage and mushroom mixture to the boiling broth along with the verjuice.
Now heat for 2–3 minutes until cooked.
Ladle the soup into deep bowls.
At this point, add the tofu to the bowls and garnish with sesame seeds.
Your soup is ready.

Crunchy Vegetable and Smoked Tofu Salad with Sesame Dressing
Ingredients:
Carrots, 2, peeled and chopped
Chinese cabbage, a 150 g piece, chopped
Cucumbers, 4, finely chopped
Radishes, 5, sliced
Scallions, 4, chopped
Vinegar, 1 tablespoon
200 g smoked tofu, cut into cubes
Spinach, 1 small bowl, chopped
Black and white sesame seeds, 1 tablespoon
Soy sauce, 1 tablespoon
Rice vinegar, 1 tablespoon
Sesame oil
Instructions:
Place the carrots, cabbage, cucumbers, radishes, and scallions in a bowl.
Mix the rice vinegar with a little salt and add it to the vegetables.
Then let it sit for 10 minutes.
Whisk the dressing ingredients with 2–3 tablespoons of water to make a thin dressing.
Fry the tofu in a little sesame oil until crispy and golden.
Add the spinach to the vegetables, then divide everything between 2 plates.
