Instructions
First, you need to cook the beans.
Pour 3 cups of water into a pot, then add the soybeans and bring to a boil.
As soon as the water boils, reduce the heat and let them simmer.
Keep cooking the soybeans until they are soft and have partially slipped out of their skins.
For faster cooking, use a pressure cooker.
Next, transfer the soybeans to a food processor and blend until they form a paste.
Place the mashed beans in a bowl and mix them with the flour.
Place the flour and bean mixture on a clean surface, shape it into a log, and then cut it into 4 pieces.
Flatten the soybean pieces on a damp paper towel and cover them with another damp paper towel.
Now let them rest in the refrigerator for 7 days.
Then unwrap the discs and arrange them on a tray.
Leave them to dry in direct sunlight.
The soybean discs should become dry and turn brown.
This product is koji.
The next stage of making soy sauce is fermentation.
For this step, take a pot that you won't be needing anytime soon.
Add the soybean discs and cover them.
The goal of this stage is for the discs to dissolve in the brine, which may take up to 6 months. Stir the mixture daily.
Once the soybean pieces have fully dissolved, strain the mixture through cheesecloth and store it in a glass bottle.
Pour some water and salt into the pot and stir until combined.
Your soy sauce is ready to use.
You can use this delicious soy sauce to flavor your meat, seafood, vegetables, and soups.
