This spaghetti contains textured soy protein and plenty of vegetables, making it delicious, healthy, and filling.
Spaghetti is a popular staple in most homes.
And because it is quick, easy, and inexpensive to make, many families enjoy it at least once a week.
So how can we turn this dish into a meatless meal?
By making a meat-free soy spaghetti sauce in which the meat is replaced with small textured soy protein granules (soy mince), such as Soy Type 3.

Which Type of Textured Soy Protein Should You Use?
Textured soy protein comes in various shapes and sizes, so its soaking and cooking times vary from one type to another and sometimes from one brand to another.
However, you can use whichever type you have on hand, according to your taste.

Ingredients:
Soaked textured soy protein
2 tablespoons olive oil
4 cloves garlic
1 small yellow onion, chopped
1 cup red bell pepper
Tomato sauce, as needed
1 tablespoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
1 package spaghetti
3 tablespoons finely chopped fresh basil and parsley
3 tablespoons freshly grated Parmesan or Pecorino Romano cheese
Instructions
To make vegetarian spaghetti with soy, first heat the oil in a large skillet over medium heat.
Add the garlic, onion, and parsley and stir for about 3 minutes, until the vegetables begin to soften.
Add the bell peppers and stir for about 2 more minutes, until the onions are lightly browned and the peppers are soft.
Turn up the heat and add the drained soy. Stir with the other ingredients for about 2 minutes until heated through and cooked.
Add the tomato sauce to the skillet.
Reduce the heat to medium-low.
Add the Italian seasoning, red pepper, salt, and black pepper, and stir.
Adjust the seasoning to your taste.
Now cover the skillet and let it simmer for 15 minutes.
Boil a package of pasta in water with a little oil and salt, then drain.
Return the spaghetti to the pot and layer the prepared textured soy protein sauce between and over it.
Now cover the pot and let it steam.
Your vegetarian soy spaghetti is ready.
Now it's time to serve.
Top each plate with ½ tablespoon of fresh basil or chopped parsley and ½ tablespoon of cheese.
You can garnish it with a little tomato sauce.
